The ingredients needed to cook Vegetable Medley:

  1. Use 250 Grams of Brussel Sprouts.
  2. Get 1 bunch of Spring Onions.
  3. Use 250 Grams of Carrots.
  4. Get 100 Grams of (2 med) Parsnips.
  5. You need 265 Gram of Tin of Mixed Beans.
  6. You need 160 Gram of Tin Sweetcorn.
  7. You need 1 of Vegetable Stock Cube.
  8. Take 250 mls of Hot Water.
  9. You need Handful of Fresh Coriander.

Instructions to make Vegetable Medley:

  1. Remove brown outside leaves of Sprouts, remove brown part of stalks. Dice. add to a medium saucepan..
  2. Peel, slice and dice Carrots. add to pot..
  3. Peel, slice and dice Parsnips. add to pot..
  4. Remove any dried or brown parts of the Spring Onions. Remove root sections. Dice everything else into small bits and add to pot..
  5. Drain tins of mixed Beans and Sweetcorn. Add to pot..
  6. Stir well. Add Coriander leaves. Stir again..
  7. Put Stock cube in about 1/2 pint, 250 mls Hot Water, stir, then add to pot. Bring to the boil, then cover and simmer for about 15-20 minutes, stirring occasionally, until all vegetables are soft, but not mushy..
  8. Can be eaten on its own, or as a side dish. Can also be frozen up to 6 months, or blitzed to make soup. Enjoy!!.
